This recipe is very versatile. That being said, feel free to substitute some of the ingredients for what you already have on hand! You could swap apples for peaches, strawberries for blueberries, almonds/pecans for pistachios, or different flavors of rice cakes. Now, don’t like ricotta? Swap for cottage cheese or feta cheese.
Rice cake treat
- 4 rice cakes
- 1/4 cup ricotta
- 2 peaches, sliced
- 1/4 cup blueberries
- 2 pinches cinnamon
- 1/2 cup pistachios
- Spread ricotta over rice cakes.
- Then, top with peach slices and blueberries.
- Lastly, sprinkle with cinnamon and also serve with pistachios.
